If you’re looking for a quick and easy protein-rich breakfast that you can eat on the go or even bring to the office, these freezer-friendly breakfast sandwiches are a great choice! Easily meal prep in a big batch and keep them in the freezer for up to 3 months and then simply reheat in the microwave for a delicious and filling breakfast.

Ingredients

Egg Mixture

  • Whisk together eggs & milk (or cottage cheese for higher protein) and then add in your choice of vegetables (spinach, bell peppers, mushrooms, etc.). Season with salt and pepper. Pour into a sheet pan lined with parchment paper and bake in the oven at 375F for 15-20 minutes until fully cooked.

Breakfast Sausage Patties

  • For extra protein, add breakfast sausage patties to a sheet pan and cook in the oven at the same time as the egg mixture. You can sub for bacon if you prefer.

Cheese

  • Very necessary in my opinion. Add when assembling the sandwiches after everything is cooked.

English Muffins

  • The vehicle for everything above. Can sub for a tortilla to make breakfast wraps, roasted potatoes to make a breakfast scramble, or a bagel.

How to Store & Reheat

Before assembling the sandwiches, allow everything to cool slightly so that there is not as much condensation (and then ice build up) when you stick them in the freezer. Wrap the assembled sandwiches in parchment paper and then place in a freezer-friendly resealable bag so that you can take them out one at a time when you need them. Freeze for up to 3 months.

To reheat, place the sandwich (wrapped in parchment paper) in the microwave and heat on high for 1-2 minutes on each side until fully heated through. Alternatively, you can reheat in the oven at 350F for 10-15 minutes or in the air fryer for 5 minutes.

Ingredients

  • 6 eggs
  • 2 Tbsp milk (or sub for 1/2 cup cottage cheese)
  • 1/2 - 1 cup veggies of choice (bell pepper, onion, spinach, etc.)
  • 6 breakfast sausage patties (or sub for bacon)
  • 6 cheddar cheese slices
  • 6 English muffins or bagels
  • salt and pepper

Instructions

  1. Whisk together the eggs, milk, salt and pepper, and veggies of choice. Pour into a small lined sheet pan. Place the breakfast sausage patties on a separate sheet pan and bake both in the oven at 375F for 15-20 minutes until fully cooked. Let cool slightly before assembling.
  2. Build your breakfast sandwich with the egg mixture, patty, and cheese. Wrap in parchment paper and store in a ziplock bag in the freezer for up to 3 months.
  3. To reheat: pop in the microwave for 2-3 minutes (flipping half way), in the air fryer for 5 minutes, or in the oven at 350F for 10-15 minutes.
