Have you made overnight oats before? It’s a great way of getting a quick, delicious, and nutritious breakfast in. Not to mention there’s endless flavour combos! Make the night before and store in the fridge overnight, then add any extra toppings you want and off you go!

Perfect for those early mornings when you’re leaving on a road trip, to work, or for an after gym snack.

Note: to truly make it an ‘Almond Joy’ overnight oats recipe, add some chocolate chips for a topping too! (For reference, Almond Joy’s are a chocolate bar with coconut, almonds and chocolate). If you don’t want it too sweet, just stick with the almonds, blueberries and coconut flakes.

Blueberry Almond Joy Overnight Oats

A delicious and nutritious breakfast for those on-the-go mornings. Make the night before for a quick breakfast the next morning.

Ingredients

  • 1/2 cup (45g) old fashioned oats 
  • 1 tsp (3g) chia seeds 
  • splash of maple syrup 
  • splash of vanilla 
  • 1/4 cup (60g) yogurt of choice 
  • 1 Tbsp (8g) almond slivers + extra for topping
  • 2 Tbsp (24g) blueberries (fresh or frozen) + extra for topping 
  • 1/2 cup (118mL) milk of choice 
  • 1 tsp (2g) unsweetened coconut flakes for topping 

Instructions

  1. In a large mason jar or sealable container, add oats, chia seeds, maple syrup, vanilla, yogurt, almonds, blueberries and milk. Stir together. 
  2. Place lid on jar and store in the fridge for at least 4 hours or overnight. 
  3. Top with extra blueberries, almonds and coconut flakes. 
  4. Enjoy for a quick on-the-go breakfast!
