Fully Loaded Breakfast Sandwich

An egg sandwich loaded with bacon, avocado, pickled red onions, and cheese. A breakfast of champions, if you ask me!

This one is for all my savoury breakfast people! A breakfast sandwich that has it all! Crispy bacon, fried egg, gooey cheese, fresh avocado and pickled red onion, and topped with a drizzle of hot sauce to finish it off. A flavour masterpiece.

This recipe is pretty straight forward so I really don’t have to elaborate too much. My only tip is to pan fry the English muffin (inside down) in the pan of leftover bacon grease. This toasts it a little and warms it up so that your cheese can melt on it.

Fully Loaded Breakfast Sandwich

Ingredients

  • 4 English muffins 
  • 4 large eggs
  • 4-6 slices of bacon 
  • 4 slices of cheese (your choice, we used mozzarella)
  • 1 avocado, sliced 
  • sriracha 
  • pickled onions 

Instructions

  1. Heat your skillet on medium heat. Add bacon and cook until crispy. Remove from skillet. 
  2. Add the eggs to the skillet and cook to desired doneness (I like mine sunny side up and runny). Remove from skillet. 
  3. Assemble sandwich by layering cheese, bacon, egg on top of one another. Top with avocado, red onions, and sriracha.
