If you know me, you know I’m a breakfast person.

I absolutely love breakfast foods (pancakes, waffles, eggs, omelettes, cereal, etc.) but I’ve also just learned over the years that my body really needs to have a decent meal at the start of the day to function well. If I don’t eat breakfast I tend to get very tired, irritated, and foggy-brained by the late morning.

So if that’s sounding like you, maybe adding in a small breakfast will help with your energy and focus (and from getting those intense cravings later in the day). In saying that, we’re all a little different so that’s okay if you don’t enjoy a big meal at the start of the day, listen to your body and eat accordingly!

If you’re looking for a delicious and easy new recipe to add to your breakfast list, try this one out! It’s a well balanced meal, providing carbohydrates and fibre (bagel, veggies), protein (egg and feta), and fats (mayo, pesto, and feta) to help keep you full and satisfied throughout the morning!

Feel free to get creative with the toppings! If you don’t like the flavour of raw onions, leave them out! If you don’t love spinach or tomato, add in some avocado instead! And if you really just like a classic breakfast sandwich, you ahead and add some bacon!

Ingredients

  • 2 bagels
  • 2 eggs, fried
  • red onion, sliced thinly
  • tomato, sliced thinly
  • handful of spinach
  • crumbled feta
  • basil pesto
  • mayonnaise
  • salt and pepper

Instructions

  1. Start by frying an egg on medium heat. If you want, you can toast the bagel in the pan too.
  2. Spread mayo on one half and pesto on the other half of the bagel. Then layer with red onion, feta, tomato, spinach, and the fried egg.
