Once the weather starts to cool down, I find myself gravitating away from the fruity and light desserts and more to the warm, rich, and comforting sweets. This sticky toffee pudding is perfect for a cozy evening around the holidays. It’s super easy to make for a crowd and is that delicious sweet end to a great dinner party. Serve with ice cream or whipped cream and of course, that delectable toffee sauce. Recipe below!

A rich and warm dessert to cozy up with on those chilly holiday evenings. Campfire and indoor oven instructions included.

Ingredients

  • 1 cup pitted dates, chopped finely and soaked in 1 cup boiling water
  • 1/4 cup dark brown sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/4 cup all-purpose flour
  • Ice cream, for serving

Instructions

  1. Start by preparing your campfire ahead of time so that you have enough coals to cook with. You will need approximately 16 coals in total. Allow ~40 minutes for campfire prep. Alternatively, preheat your indoor oven to 350F.
  2. Soak chopped dates in the boiling water for at least 15 minutes to soften. Then add to a bowl and whisk with brown sugar, eggs, and vegetable oil.
  3. Add the salt, baking powder, baking soda, and flour and mix until just combined.
  4. If baking over the campfire: pour into a cast iron dutch oven lined with parchment paper and cover with the lid. Carefully remove 5 hot coals from the campfire and place on the ground, set the dutch oven on top of these coals. Now place 11 hot coals on the lid of the dutch oven and bake for ~20 minutes until golden brown. Make sure to check occasionally by removing the lid carefully, to ensure it doesn’t burn.
  5. If baking in the indoor oven: pour into a greased 10 inch round pan and bake in the preheated oven for ~20 minutes, until golden brown.
  6. In the meantime, prepare the sauce by simmering the butter, brown sugar, and half of the heavy cream over a low heat. Once all the sugar is dissolved, remove from the heat and add the rest of the heavy cream. Serve the warm cake with ice cream and the toffee sauce.
