Chocolate Coconut Backpacking Pudding
This may be one of the simplest homemade backpacking desserts! Chocolate, coconut, and crushed Oreos - you can’t go wrong!
Okay y’all, this is one I’m SUPER excited about. Not because it’s anything super fancy or ground breaking. It’s simple. It’s delicious. It takes almost no time to make. And it’s backpacking ready!
The inspiration for this one came from AlpineAire’s Chocolate Mudslide dessert. I think one summer I ate it every other weekend. It was glorious. For my tummy that is, not for my wallet (I think they’re typically ~$10.00 per package). Hence the creation of this VERY affordable but equally delicious backpacking dessert.
Ingredients
All you need is water and 3 ingredients you can find from your grocery store (or maybe even the gas station):
chocolate pudding mix
coconut milk powder (you can absolutely use skim milk powder, but I wanted that creamy coconut flavour so decided on coconut milk)
oreos or whatever your favourite cookie is!
water
Instructions
I really don’t even need to write anything here. You simply mix the pudding mix, coconut milk powder, and water together in a small bowl. You may want to let it sit a couple minutes to thicken a bit. Then top with crushed Oreos and enjoy!

- 3/4 cup warm water
- oreo cookies, crumbled
Instructions
- Mix pudding mix, coconut milk powder, and water together until smooth.
- Top with crushed Oreos!
