Honey, Rosemary, and Walnut Baked Brie

If you’re looking for a Christmas party appetizer, this is the one. Creamy brie cheese topped with sweet honey, crunchy walnuts, and fragrant rosemary, all wrapped in a flaky pastry dough. This is a show stopper. Oven and campfire instructions included.

We all know that a huge part of the holidays is the food. The baking, the snacks, the appetizers, we all have our favourite holiday foods. One of my family’s newer holiday traditions is having a charcuterie board (meat and cheese board) on Christmas Eve with a nice glass of wine instead of a big dinner. Over the last couple years I’ve made a baked brie to add to the charcuterie board and it’s always one of the most popular items.

Baked brie is warm, creamy, and the perfect companion to a fresh baguette or cracker. There’s many different flavours you can add to brie, but my personal favourites are fig jam or honey. So in honour of the holiday season, here is a delicious honey, rosemary, and walnut baked brie recipe for you to try out at your next holiday party!

What You’ll Need

This recipe is very simple and just uses a handful of ingredients. To simplify it even more, you can leave out the puff pastry dough and just bake the brie on its own with the toppings. Here are the ingredients you’ll need:

  • round of brie cheese

  • honey

  • fresh rosemary

  • walnuts

  • puff pastry dough

  • egg for egg wash

  • oven proof dish or tinfoil

Oven Instructions

  1. Start by rolling out the puff pastry dough to an even square, about 1/4 inch (0.5cm) thick.

  2. Place the brie in the middle and top with honey, fresh rosemary, and walnut pieces.

  3. Fold the corners of the puff pastry towards the centre and pinch together in the middle. Brush lightly with an egg wash.

  4. Bake in a preheated oven at 400F for 25-30 minutes until the puff pastry is golden brown and the brie is melted and gooey.

  5. Serve warm with crackers or a fresh baguette.

Campfire Instructions

  1. Start your campfire ahead of time to give enough time for some coals to be produced.

  2. Follow steps 1-3 above to prep the brie.

  3. Place in a dutch oven or cast iron pan with a lid.

  4. Bake for 20-30 minutes with 10 coals below and 15 coals on top, checking occasionally to ensure the pastry isn’t burning.

Tip: if you leave out the puff pastry you can easily wrap the brie in tin foil and bake over the campfire using a fire grate. If you use tin foil with puff pastry, you may not be able to fully cook the pastry. For more details on how to do this, check out my other Baked Brie recipe.

  • handful of walnuts, chopped
  • puff pastry dough
