Grilled Chicken and Vegetable Skewers with Spicy Peanut Dipping Sauce

Delicious seasoned chicken and colourful vegetables stacked onto skewers and grilled to perfection. This is an easy camping dinner that can be cooked over the campfire, portable grill, or BBQ. Pair with a peanut dipping sauce for the extra yum-factor!

I’m sure we all have those certain meals that bring back nostalgic memories or specific feelings with them. Cinnamon buns when visiting grandmas house, ice cream on a hot summers day, or sugar cookies at Christmas. To me, chicken and vegetable skewers are an ode to summer bbq’s and sitting outside chatting with friends and family late into the night. At some point they became my family’s go-to summer bbq meal and honestly I’m not mad about it. They’re easy, simple, and so delicious.

This recipe was created for our friends at Eureka Camping this past summer. I used the SPRK Camp Grill to cook the skewers but you can also easily cook them over fire or on the BBQ.

Ingredients

For the skewers:

  • chicken breast or protein of choice - I typically use raw chicken and cut it up myself however, you want to be careful when handling raw chicken outdoors. Make sure you have a good cooler or fridge to keep chicken cool until you’re going to assemble the skewers and make sure to use a separate cutting board and knife for cutting the chicken to prevent cross-contamination with other foods. Wash equipment and hands well after handling. TIP: as an alternative, you can just have vegetable skewers on the side of a different protein (like burgers or steak), use a plant-based protein like tofu instead, or you can prep the skewers at home before leaving and store in the cooler/fridge until you’re ready to cook. This cuts down on the raw chicken cutting/handling while out camping.

  • chicken or BBQ spice (I used Montreal Steak spice)

  • bell peppers

  • red onion

  • jalapeño

  • zucchini

  • small mushrooms

  • olive oil

For the dipping sauce:

  • peanut butter

  • soy sauce

  • brown sugar

  • lime juice

  • freshly grated ginger

  • chilli garlic sauce (or sriracha)

Instructions

  1. Chop up all the veggies into bite sized pieces, drizzle with olive oil and spices. Cube chicken and put in separate bowl. Drizzle with olive oil and spices, mix well.

  2. Preheat grill to medium heat.

  3. Assemble skewers by alternating with chicken and veggies.

  4. Cook until chicken is no longer pink and veggies are softened, rotating skewers as you go. About 10-15 minutes.

  5. Mix dipping sauce ingredients together, add water to make desired consistency.

Tips

  • If using wooden skewers, soak in water for at least 20 minutes before assembling. This will help prevent the wood from burning while the food is grilling.

  • To reduce prep time while camping, prep skewers at home before heading out. Store in cooler/fridge inside resealable container or wrapped in plastic wrap until it’s time to cook.

  • 2-3 chicken breast, cubed
  • Chicken or BBQ spice (I used Montreal Steak spice)
  • 1-2 bell peppers, cubed
  • 1 red onion, cubed
  • 1 jalapeño, cubed
  • 1 zucchini, cut into coins
  • 6-8 small mushrooms
  • 2-3 Tbsp olive oil
Dipping Sauce
  • 3 Tbsp peanut butter
  • 1 Tbsp soy sauce
  • 1-2 tsp brown sugar
  • 1 Tbsp lime juice
  • 1 tsp freshly grated ginger
  • 1-2 tsp chilli garlic sauce (or sriracha)
