Quick Chicken Tacos with Fresh Salsa

Another recipe to add to your taco Tuesday menu! These quick chicken tacos are easy and so delicious, filled with juicy chicken, fresh salsa, and chipotle mayonnaise - a great addition to your next camping trip!

Ingredients

Chicken - if you have access to a good cooler or fridge, buying raw chicken and cooking it at camp is a great option for nice juicy chicken, however means you’re handling raw meat and you probably want to be a little more careful with clean up and cross contamination. If you want to make things really easy and stress-free, you can buy pre-cooked chicken in the deli section or a rotisserie chicken. Either one will still need to be kept cool until dinner time, but means you don’t have to be handling any raw meat.

Fresh salsa - be creative with what you like and have available! I love starting with a base of tomatoes, onion, and cilantro, and then adding extras that I may have on hand like avocado, corn, or bell peppers.

Sauces - again, up to your preference! I used a chipotle mayo but you can easily use sriracha, hot sauce, sour cream, etc.

Instructions

  1. Marinade chicken thighs in taco seasoning, orange juice, and a good drizzle of olive oil for at least 20 minutes. If letting marinade for any longer, make sure to store back in the cooler/fridge. This will help tenderize the meat and makes it more flavourful, juicy, and tender.

  2. While meat is marinading, combine tomatoes, red onion, corn, avocado, cilantro and lime juice to create a delicious fresh salsa. Mix together well and set aside.

  3. Heat cooking oil in a pan on medium heat. Fry chicken thighs on both sides until cooked through, about 5-8 minutes each side, depending on the thickness. Let rest for a few minutes before slicing up.

  4. Heat the tortillas over the flame if you want. Assemble taco with chicken, fresh salsa, and top with sauce of your choice.

  • 6-8 chicken thighs
  • 1 package taco seasoning
  • 1/4 cup orange juice
  • Olive oil
  • Handful of cherry tomatoes, halved
  • 1/2 red onion, diced
  • Can of corn
  • Handful of fresh cilantro
  • Squeeze of lime juice
  • Avocado, diced
  • 8-16 small tortillas
  • Creamy chipotle sauce or sauce of choice

Instructions

  1. Marinade chicken in taco seasoning, OJ, and a good drizzle of olive oil for at least 20 minutes. Meanwhile chop up veggies for the easy salsa.
  2. Combine tomatoes, red onion, corn, avocado, cilantro and lime juice. Mix together well.
  3. Heat olive oil in a pan on medium heat. Fry chicken thighs on both sides until cooked through. Let rest for a few minutes before slicing up.
  4. Heat your tortilla over the flame if you want. Assemble taco with chicken, fresh salsa, and top with creamy chipotle sauce.
