Backpacking Apple Crisp

A super easy backpacking dessert using dried apples and an instant oatmeal packet! Simple, quick and delicious!

This recipe was created for a recent project with Jetboil. We headed deep into the mountains, out of cell service, to camp at one of our favourite hidden gems in the Rockies. We nearly had the place to ourselves other than a few other campers, but we did have a few grizzlies hanging around. Fresh tracks and a couple sightings by other campers - definitely kept us on our toes!

Fruit crisps are seriously one of my favourite desserts. Warm and sweet fruit filling with a crunchy oat topping, maybe with a scoop or two of ice cream. Mmm mm! Usually you bake these in the oven but instead, fry the topping in a pan with a little butter or coconut oil and you got something that is pretty dang close to the original thing!

I had the idea of trying out a flavoured instant oatmeal packet for the topping because it already has sugar and spices in it, and it turned out delicious! Keeps it simple and easy! You can of course use plain oats and bring up some sugar, cinnamon, or whatever you usually like in your crisp topping.

The steps are fairly simple.

Start by rehydrating some dried apples with boiling water (you could also cold soak in water, they just won’t be warm).

Melt a little butter or coconut oil in a skillet on low heat and add your instant oatmeal, a little cinnamon and a handful of walnuts (I love adding nuts because it adds a little extra crunch and yumminess!). Toast together in the pan until golden brown, about 5 minutes.

Drain any excess water from apples. Sprinkle the oat mixture over the apples and enjoy right away!

Can be enjoyed as a dessert or sweet breakfast!
